Spinach & Cheese Stuffed Mushrooms


One good thing about my weight loss journey is all the healthy and delicious food I've been eating lately.  My favorite so far has to be these Spinach & Cheese Stuffed Mushrooms!

They are so delicious and easy to make and I'm sharing the recipe with you just to prove it!

Prep Time:  10 minutes
Cook Time: 10-15 minutes
Total Time:  20-25 minutes


Ingredients:

  • Medium - Large Whole Baby Bella Mushrooms
  • Baby Spinach
  • Shredded Mozzarella Cheese
  • Salt & Pepper


Directions: 

  1. Preheat oven to 375 degrees F.  Spray a baking sheet with non stick spray or drizzle some oil to lightly coat it.
  2. Grab your mushrooms to take out the stems one by one, and place them on the baking sheet.
  3. Fill each mushroom with 2-3 leaves of spinach. 
  4. Top it with some mozzarella cheese; sprinkle salt and pepper to taste.
  5. Place in oven for 10-15 minutes.
  6. Serve as a side or eat as a snack.

These little mushrooms are amazing!  The flavors from all the ingredients blend together in the oven making it very delicious.
