These Pancake Muffins are so good! I'm in love with how easy they are to make. If you don't know how to make pancakes or you're always on the go, this might be a nice alternative for you to try.
All you need is a muffin pan, your favorite pancake ingredients (I use bananas, blueberries, strawberries and sometimes raisins), and your favorite box of pancake mix or recipe. I also like to use a good size ice cream scoop to get an even amount into each muffin pan.
Set your oven to 350 degrees. Prepare your pancake mix and cut items you will be putting in your pancake muffins, keeping in mind that they will need to be in tiny pieces. Scoop the mix with your ice cream scooper and fill each muffin pan up. Each muffin will equal to one pancake. Then, drop each item you want to put into them on top of the mix and put them into the oven for 15-20 minutes.
When the 15-20 minutes are up, this is what you will have.....
I love this recipe because it allows you to multi task. You can start the laundry in the morning, wash and put up dishes, or just catch up on some TV/Internet time while breakfast is cooking. If you are always in a rush in the morning then you can bake them at night, put them in the fridge and just warm them up in the microwave or toaster oven in the morning. Fast & yummy!
My next adventure with this recipe is to make bacon pancake muffins! I've never tried them, but anything with bacon sounds delicious!
